Gooseberry cake with almond and meringue topping recipe details
Ingredients
For the dough: | |
1 glass(es) | gooseberries, drained 360g |
200 g | flour |
25 g | cornstarch |
4 tsp | baking powder |
100 g | sugar |
1 tsp | vanilla extract |
3 | egg yolks |
2 | eggs |
150 g | yoghurt |
For the topping: | |
3 | egg whites |
60 g | sugar |
1 tbsp | almond slivers |
Instructions
Preheat the oven to 180°C.For the dough:
Combine the flour, the corn starch and the baking powder. Add in the egg yolks, eggs, sugar, vanilla extract and yoghurt and stir until smooth. Fold in the gooseberries. Line the bottom of a springform pan and spoon in the dough. Bake for approximately 30 minutes.
Transfer the springform pan on a wire rack and allow to cool slightly.
For the topping:
Whisk the egg whites until stiff, and trickle in the sugar while whisking. Fill the mixture into a piping bag with a star-shaped nozzle and extrude heaps all over the top of the sponge. Sprinkle with the almond slivers then transfer to the oven again and bake for further 10 minutes at the same temperature.
Remove the springform pan and transfer the cake on a wire rack to cool.
