Ingredients
1 | globe artichoke |
2 tsp | lemon juice |
1 | bay leaf |
4 | peppercorns |
4 | tomatoes, peeled and halved |
salt and pepper | |
1 tsp | tomato puree |
50 g | cream cheese |
1 tsp | chives, chopped |
Instructions
Place the artichoke with the lemon juice, peppercorns and the bay leaf in boiling salted water and cook for 25-35 minutes or until the outer leaves are to pick off easily.Purée the tomatoes and stir in the cream cheese, the chives and the tomato purée. Season to taste with salt and pepper.
Serve the cooked artichoke together with the tomato sauce.
