- Ingredients
- 3/4 cup brown sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 cup molasses
- 1/2 cup boiling water
- 1/2 teaspoon baking soda
- 2-3/4 cups flour
- 2 teaspoons baking powder
- 4 teaspoons ginger
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1 teaspoon cloves
- 1/4 teaspoon salt
- Ingredients for glaze
- 1/2 cup powdered sugar
- 1 to 2 Tablespoons lemon juice
Instructions:
Heat oven to 350 degrees. Grease 8 x 4-inch loaf pans. In a large bowl, combine brown sugar and butter; beat until light and fluffy. Add eggs; beat well. In a small bowl, combine molasses, water, and baking soda; mix well and beat into brown sugar mixture. Gradually add flour, baking powder, spices, and salt; mix well. Spoon batter into greased pans.
Bake at 350 degrees for 40 to 45 minutes or until loaves spring back when touched lightly in the center. Cool 15 minutes; remove from pans. Cool 1-1/4 hours or until completely cooled. Combine powdered sugar and lemon juice; brush loaves with glaze.
