German Apple Pancake recipe

- Ingredients – Pancakes:
- 3 large eggs
- 3/4 cup milk
- 3/4 cup flour
- 1/2 teaspoon salt
- Ingredients – Filling:
- 1 pound tart apples (I use 5 Romes)
- 1/4 cup butter
- 1/4 cup sugar
- Cinnamon and nutmeg to taste
- Powdered sugar
Instructions:
Preheat oven to 450 degrees. Beat eggs, milk, flour and salt until smooth. Melt 1-1/2 Tablespoons butter in a heavy 12-inch skillet. Pour batter onto skillet. Bake 10 minutes at 450 degrees and 10 minutes at 350 degrees. Saute apples in 1/4 cup butter and season to taste. Place pancake on large platter. Put apple on one side, fold pancake over, top with melted butter and then top with powdered sugar. Enjoy for breakfast or an evening meal.
