Geranium cake recipe details
Ingredients
225 g | plain flour |
½ tsp | salt |
1 tsp | baking powder |
120 g | butter |
225 g | caster sugar |
5 medium | eggs, whites only – you may need one more – lightly whisked until frothy |
some | lemon geranium leaves, freshly picked |
Instructions
Only use geranium leaves that you have picked from a source known to be free of recent insecticide sprays or possible roadside contamination by petrol or diesel fumes, and especially leaded fuels. Wash them before use.Grease a 2lb, 900g-1Kg loaf tin, and line with baking parchment and lightly grease again. Crumble the geranium leaves over the lining.
Preheat oven to Gas Mark 5, 190°C, 375°F.
Sift flour, salt and baking powder into a bowl.
Cream butter and sugar together in a fresh bowl. Add 1 tbsp of water and mix. Add dry ingredients and mix. Fold in egg whites and then beat hard for 5 minutes.
Pour batter into pan and bake for about 50 minutes.
Allow to cool in tin for 10-15 minutes and then invert onto a wire rack to cool. Remove lining and geranium leaves when just warm. Although edible, the geranium leaves are for flavour only. Sift icing sugar on top of cake before slicing and serving.
