Georgia's frittata delight recipe details
- Ingredients
- 1/2 pound hot Italian sausage (either pork or turkey), broken and sauteed
- 1/2 cup sliced fresh green onions
- 6 eggs, slightly beaten
- 1/4 cup skim milk
- 1 teaspoon chopped fresh basil leaves
- 1/4 teaspoon coarse ground pepper
- 2 Tablespoons butter
- 1/2 teaspoon finely chopped fresh garlic
- 1 cup zucchini, diagonally sliced 1/4-inch thick
- 1 medium tomato, thinly sliced
- 1/2 cup basil-tomato feta cheese
A baked frittata with hot Italian sausage, sliced zucchini, tomatoes, and basil-tomato feta cheese.
Heat oven to 350 degrees. In a medium bowl, mix together onion, eggs, milk, basil, and pepper. In a 10-inch ovenproof skillet or baking dish, melt butter over medium heat and stir in fresh garlic. Pour egg mixture into skillet or baking dish. Bake for 8 to 10 minutes until egg is partially set. Cook sausage in small skillet over low heat for 7 to 10 minutes and set aside.
Remove partially cooked egg mixture from oven. Arrange cooked sausage, zucchini, and tomato slices in a circle on top of egg and sprinkle top with feta cheese. Continue baking for 10 to 15 minutes or until eggs are set in the center and cheese is melted. Cut into serving slices and garnish with fresh basil.
