This easy potato recipe works as a side dish (put in the oven alongside whatever else you’re roasting) or as an appetizer.

Ingredients
Serves: 8- 4 pounds Russet potatoes, peeled and cut into 6 wedges per potato
- 1/2 cup olive oil
- 1/4 cup minced garlic
- 1/2 tablespoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
Preparation method
Prep: 20 mins | Cook: 1 hour 5 mins1. Preheat oven to 425 degrees F.
2. Spread potatoes on two large baking sheets with edges. Drizzle with olive oil and sprinkle with garlic, salt, and pepper. Toss to combine.
3. Drizzle each pan with 1/4 cup chicken broth (or water if you don’t have the broth). Bake for 45 minutes, flipping once midway through cooking time. Remove from oven and drain wedges on paper towels.
4. Turn oven temperature down to 350 degrees F. Spread baking sheets with parchment paper, pour wedges back onto the baking sheets, and bake for another 20 minutes until crisp.
