This is a wonderful summer, light dinner. This also make a great side as well.

Ingredients
Serves: 6- 1 box garden rotini pasta – cooked and drained
- 1/2 sm onion – minced
- 1 small can black olives – chopped and drained
- 1 – 15oz dark red kidney beans – drained
- 1 large bottle zesty Italian dressing -20 to 30oz
- 1 cup shredded cheddar cheese
- 1/4 tsp minced garlic
- 1-2 small roma tomatoes – diced and rinsed of seeds
Preparation method
Prep: 40 mins | Cook: 30 mins | Extra time: 2 hours, chilling1. cook and drain garden rotini pasta. place in large serving bowl to cool.
2. While pasta is cooking, prep vegetables and set aside. when pasta is cooled for approx. 10 minutes, add vegetables. toss to mix well into pasta; add zesty Italian dressing. Add cheese. salt and pepper to taste.
3. chill for approx. 2 hours in fridge covered with lid or plastic wrap. fluff pasta lightly with fork.
4. OPTIONAL: add pre cooked grilled chicken strips or fajiata steak meat. This makes the salad a main dish.
