Chicken roll ups recipe details
This is a “paraphrase” of a recipe I saw on TV. I made it according to the original and then decided to add my own changes. I’ve found it was better with the changes. It is basically a stuffed chicken breast, but with a different twist. The original calls for just a thin slice of ham inside the chicken breast and for a pasta salad instead of rice.

Ingredients
Serves: 4- 1 1/2 cups goat cheese
- 1 medium red onion, chopped finely and evenly divided
- 1 package frozen chopped spinach, thawed and drained
- 1/8 teaspoon salt
- 1/4 teaspoon black or white pepper
- 4 boneless, skinless chicken breasts
- 4 slices prosciutto
- 2 tablespoons honey Dijon mustard
- 1 cup unseasoned bread crumbs
- 1/3 cup olive oil, plus 1/4 cup for baking dish
- Brown rice
- 1 each: green, yellow and red bell pepper, diced
Preparation method
Prep: 20 mins | Cook: 25 mins1. Blend the goat cheese, half the chopped onion, spinach, salt and pepper until smooth. With a meat mallet, pound the chicken breasts flat to a 1/4″ thickness. Lay a slice of prosciutto on the breast, take a large spoonful of the cheese mixture and place on one end. Roll the breast up loosely and secure with two toothpicks to prevent unrolling during cooking. Brush with the honey-dijon mustard and roll in the bread crumbs, coating lightly. In a large skillet, heat olive oil until hot, but not smoking. Place the rolled chicken breasts in the skillet and brown them. Transfer to a baking dish in which you have put 1/4 cup of olive oil. Bake at 325 F for 25 minutes or until the juices run clear. While chicken is baking, prepare the bed on which to serve by combining cooked brown rice, the peppers and remaining onion. Mix well and spread on a serving platter. Place the rolled chicken breasts on top of the rice and serve.
