Ingredients
Serves: 4- 2 tablespoons olive oil
- 1 pound ground beef
- 1 red onion, chopped
- 3 cloves garlic, chopped
- 2 zucchini, chopped
- 2 jalapeno chiles, seeded and chopped
- Salt and pepper, to taste
- 1 1/2 cups fresh corn kernels
- 2 tablespoons chili powder
- 1 tablespoon sweet smoked paprika
- 1 (12 ounce) bottle beer
- 1 (28 ounce) can tomatoes
- 2 tablespoons chopped thyme
- Lime juice and zest of 1 lime
Preparation method
Prep: 15 mins | Cook: 30 mins1. Pour the oil in a large skillet over medium heat. Get the oil hot (it will start to thin slightly). Add the ground beef and cook until completely browned, about 10 minutes. Then add all vegetables, salt, pepper, chili powder, and paprika and cook for 6 more minutes.
2. Add beer, stir, and keep cooking for 3 minutes. Add the tomatoes, thyme, and lime zest. Simmer for about 5 minutes.
3. Pour into bowls and serve with the lime juice squeezed over each bowl.
