- Ingredients
- 1 large onion, chopped
- 6 eggs (beaten)
- 1-1/2 cups Swiss cheese, grated
- 4 slices bacon
- 1-1/2 cups vegetable of the season
Brown bacon in an 11-inch iron skillet and reserve-remove most of the drippings. In remaining drippings, saute onion. Add crumbled bacon and lightly steamed vegetable of the season. Add beaten eggs and top with Swiss cheese. Place a lid on skillet and allow to cook on low heat until nearly set. Finish under broiler in oven until top is brown.
