Game soup recipe details
Ingredients
450 g | game bird, e.g. pheasant, partridge, boneless meat |
250 g | lean beef |
60 g | lean ham |
1 | onion |
1 | carrot |
1 small | white turnip |
1 stalks | celery |
50 g | butter |
1 ½ l | beef broth |
greens | |
4 | juniper berries |
salt and pepper | |
2 tbsp | dry sherry |
Instructions
Cut all the meat and the ham into small pieces. Wash, clean and dice the vegetables.In a large saucepan, melt the butter and sear the meat and the vegetables. Deglaze with the broth. Add in the greens and the juniper berries. Season with salt and pepper.
Simmer the soup over low heat for 1-2 hours. Add more water, if necessary. Allow the soup to cool, then skim off most of the fat.
Heat up again and purée the soup. Check seasoning and correct if necessary. Stir in the sherry and serve in warmed soup bowls.
