Fusilli salad with sweet peppers recipe details
Ingredients
3 | red or yellow bell peppers, or a mixture roasted and peeled |
1 clove(s) | garlic |
2 | anchovy fillets in olive oil, drained |
450 g | fusilli or other short dried pasta |
6 tbsp | extra-virgin olive |
2 tbsp | capers well drained |
300 g | mozzarella cheese, diced |
12 | fresh basil leaves, torn into small pieces |
salt and fresh ground pepper to taste |
Instructions
Cut the roasted peppers length wise into strips about 1 cm wide and set aside.Place the garlic and anchovies in a small bowl. With a fork, mash them together to form a smooth paste; set aside.
In a large pot bring 5 litre salted water to a boil. Add the pasta and cook until al dente. Drain the pasta and arrange it on a serving dish. Pour the olive oil over the pasta, add the anchovy-garlic paste and capers and toss well. Let cool to a room temperature. Add the peppers, Mozzarella and basil. Season to taste with salt and pepper, toss well.
Serves 4 as a main course, 6 as an appetizer or side dish. Serve at room temperature.
