Ingredients

3  red or yellow bell peppers, or a mixture roasted and peeled
1 clove(s) garlic
2  anchovy fillets in olive oil, drained
450 g fusilli or other short dried pasta
6 tbsp extra-virgin olive
2 tbsp capers well drained
300 g mozzarella cheese, diced
12  fresh basil leaves, torn into small pieces
salt and fresh ground pepper to taste

Instructions

Cut the roasted peppers length wise into strips about 1 cm wide and set aside.

Place the garlic and anchovies in a small bowl. With a fork, mash them together to form a smooth paste; set aside.

In a large pot bring 5 litre salted water to a boil. Add the pasta and cook until al dente. Drain the pasta and arrange it on a serving dish. Pour the olive oil over the pasta, add the anchovy-garlic paste and capers and toss well. Let cool to a room temperature. Add the peppers, Mozzarella and basil. Season to taste with salt and pepper, toss well.

Serves 4 as a main course, 6 as an appetizer or side dish. Serve at room temperature.
