Ingredients

1  lemon, grated peel
1  orange, grated peel
4 tbsp redcurrant jelly
4 tbsp port
1 tsp mustard powder
1 tsp ginger powder

Instructions

In a saucepan combine lemon peel and orange peel and a little water. Bring to a boil and cook over low heat for 5 minutes. Strain through a sieve and keep the blanched peel.

In a pan combine the redcurrant jelly with the port and heat, but donít allow to boil. Whisk in the juice of the orange and of half a lemon, the citrus peel, mustard and ginger.

Serve with poultry or venison.
