Braised spanish chicken and potatoes recipe details

Ingredients
Serves: 4- 2 tablespoons olive oil
- 4 skin-on, bone-in chicken breasts
- Salt and pepper
- 1 onion, pureed
- 1 red bell pepper, pureed
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 bay leaf
- 1/2 pound baby red potatoes, halved
- 1 (8-ounce) can tomato sauce
Preparation method
Prep: 15 mins | Cook: 45 mins1. Pour olive oil into a large skillet on medium heat. When oil is hot, add chicken and season with salt and pepper. Brown the outsides, turning frequently; this should take about 5 minutes. Remove from skillet.
2. In same skillet, combine pureed onion, bell pepper, garlic, cumin, and the bay leaf. Cook, stirring, for about 2 minutes. Then add the potatoes, tomato sauce, and 1 cup water. Bring to a boil.
3. Reduce heat to low and simmer the sauce for about 10 minutes. Then return the chicken to the skillet and cook for another 30 minutes on low.
