This recipe is ideal for those whose stomachs cannot handle balsamic vinegars – like mine! The cranberry and cider vinegar compliment lighter main course meals. Please note the overnight storage in steps 1 and 2 is optional, but the longer the oil and vinegar sit in the fridge, the better the flavors combine.

Ingredients
Makes: 2 cups- 1 cup extra virgin olive oil
- 1 tsp oregano
- 1 cup cider vinegar
- 1/2 cup raspberries
Preparation method
Prep: 10 mins | Extra time: 12 hours, other1. In medium bowl, stir to combine oil and oregano. Pour into container, seal, and store in refrigerator overnight to combine flavors.
2. Pour vinegar into separate container, and place raspberries into the container. Place in refrigerator overnight to combine flavors.
3. Pour vinegar (sans raspberries) into medium bowl. Slowly drizzle olive oil mix into vinegar, whisking vigorously. Mix in crushed herbs if desired.
