Ingredients
225 g | self-raising flour |
½ tsp | salt |
75 g | sultanas or currants |
40 g | butter, at room temperature |
30 g | sugar |
¼ tsp | mixed spice, optional |
1 large | egg, beaten |
dash(es) | milk, to help form the dough plus extra for glaze |
Instructions
Preheat oven to Gas Mark 6, 200°C, 400°F.In a large bowl mix flour and salt together. Add sugar, sultanas or currants and mixed spice (if using). Roughly mix. Add butter and rub in between tips of fingers until you reach the breadcrumb stage. Add egg and a splash of milk. Mix to form soft dough. If the dough fails to come together completely, add a second splash of milk and mix again.
Roll or pat out to about ¾ inch or 1.5cm thick. Use a 2 inch, 5cm round or fluted cutter to cut out rounds. Press surplus together and pat down to desired thickness. Cut out additional round(s). Glaze with a little milk. Place on baking tray and bake for 10-12 minutes until golden and risen.
Place on wire tray to cool. Serve just warm or cold with clotted or double cream and jam, or with plenty of butter.
Makes 6-8. Serve one per person.
