Rhubarb dessert recipe details
- Crust Ingredients:
- 1 cup margarine
- 2 cups flour
- 2 Tablespoons sugar
- Filling Ingredients:
- 6 egg yolks
- 2 cups sugar
- 1 cup half & half (I use undiluted evaporated milk)
- 1/2 teaspoon salt
- 1 orange rind, grated
- 5 cups rhubarb, cut fine
- 4 Tablespoons flour
- Meringue Ingredients:
- 6 egg whites
- 1 teaspoon vanilla
- 6 Tablespoons sugar
- 1/4 teaspoon salt
Crust:Mix 1 cup margarine, 2 cups flour and 2 tablespoons sugar, Roll out and place in pie pan and bake for 12 to 15 minutes.
Filling:Beat egg yolks. Add 2 cups sugar. Beat. Add milk, salt, orange rind, flour, then rhubarb. Pour into crust. Bake 40 minutes or until custard sets in 350-degree oven.
Meringue:Beat egg whites, vanilla, suger, and salt, then pour over filling. Bake in 350-degree oven until brown.
