Fruit omelette recipe details
Ingredients
2 tbsp | unsalted butter |
3 medium | eggs |
2 tbsp | cream |
2 tsp | caster sugar |
⅛ tsp | salt |
fresh mint, for garnish | |
icing sugar, to dust | |
1 | soft fruit, e.g. persimmon or star fruit, sliced |
1 | tangerine, segmented |
fresh berries or Chinese gooseberries |
Instructions
Whisk the eggs, cream, salt and caster sugar together in a small bowl until lightly foamy.Melt the butter in a medium frying pan over a medium heat. Add the egg mixture and cook gently for a minute or so, whisking lightly with a fork or spatula. Increase the heat very slightly and continue to cook until almost set. Fold on half and cook for another 30 seconds.
Divide equally and serve immediately, with fruit portions and liberally dusted with icing sugar.
