1 tbsp | lemon juice |
1 tsp | mustard |
salt and pepper | |
150 ml | oil |
3 sprig(s) | chervil, roughly chopped |
3 sprig(s) | parsley, roughly chopped |
¼ bunch(es) | chives, roughly chopped |
Instructions
All ingredients should have the same temperature.In a high vessel combine the egg yolks with lemon juice and mustard. Season with salt and pepper. Whisk with a hand blender, adding the oil first drop by drop, then in a thin stream. Stir in the herbs.
Goes well with potatoes in their jackets or with boiled eggs or fried fish.
