Ingredients

1	fresh egg yolk
1 tbsp	lemon juice
1 tsp	mustard
	salt and pepper
150 ml	oil
3 sprig(s)	chervil, roughly chopped
3 sprig(s)	parsley, roughly chopped
¼ bunch(es)	chives, roughly chopped

Instructions

All ingredients should have the same temperature.

In a high vessel combine the egg yolks with lemon juice and mustard. Season with salt and pepper. Whisk with a hand blender, adding the oil first drop by drop, then in a thin stream. Stir in the herbs.

Goes well with potatoes in their jackets or with boiled eggs or fried fish.
