Here’s our version of a recipe that is very popular in our area and quite often you will see it on a menu or a buffet in some of our Amish-style restaurants. I think it’s a nice complement to our breakfast entrees and would even be nice as a refreshing snack or light dessert on a hot summer day.
- Ingredients
- Two 16-ounce cans crushed pineapple
- Two 6-ounce cans mandarin oranges
- 4 bananas sliced
- 1 bag or 2 cartons frozen raspberries
- 1 can orange juice concentrate
- 1 can Sprite or similar soft drink
Stir all together in a large bowl, juice from cans and all. It can be sweetened with up to 3/4 cups sugar, but we generally like to freeze it and serve it this way. We like to ladle it into individual plastic party cups and freeze on trays. Remove cups as needed from freezer about 45 minutes before serving time, enough time to soften, but not melt. We invert and serve in shallow china bowls with a sprig of fresh mint for garnish. Its nice berry color and tangy flavor are sure to please guests over and over.
