Fried tuna with white asparagus recipe details
Ingredients
20 g | pine nuts, toasted |
1 bunch(es) | wild garlic, chopped |
4 tbsp | olive oil |
2 kg | white asparagus, peeled |
salt and freshly ground black pepper | |
sugar | |
4 | tuna steaks |
100 g | single cream |
100 ml | white wine |
Instructions
Cook the asparagus in salted water with 1 teaspoons of sugar for 12-15 minutes.Place the pine nuts with wild garlic and 3 tablespoons of oil into a blender and process until smooth. In a small saucepan, heat the pesto and stir in the cream and the wine. Season to taste with salt, pepper and sugar.
Season the fish with salt. In a pan, heat the 1 tablespoon of oil and fry the fish over high heat from both sides for just a minute.
Serve the fish with the asparagus and the sauce.
