Pancakes with pears and hazelnuts recipe details
Ingredients
200 g | butter |
8 | eggs |
100 g | flour |
½ l | milk |
4 tbsp | sour cream |
8 tbsp | ground hazelnuts |
10 tbsp | icing sugar |
4 | sweet pears |
2 tsp | lemon juice |
1 pinch(es) | salt |
Instructions
Melt and slightly brown 140g butter, then allow to cool until just lukewarm. Separate the eggs. Whisk the egg yolks with flour, butter, milk, sour cream, nuts and 4 tablespoons of icing sugar. Leave the batter to stand for 30 minutes.Meanwhile, peel, halve and core the pears. Cut the pears in small slices and mix with lemon juice.
Preheat the oven to 250°C. Whisk the egg whites with a pinch of salt until stiff, then fold the beaten egg white in the dough.
Bake 4 pancakes, for each pancake use approximately 15g of the remaining butter. Pour a ladle of the batter in the hot butter and tilt the pan to divide the batter evenly. Bake for ½ a minute, then divide ¼ of the pears slices on top and dust with icing sugar. Transfer the pan in the oven and bake for further 5-8 minutes until the pancake is golden brown. Repeat with the remaining ingredients in the same way.
Dust the pancakes when ready with icing sugar and serve immediately. They taste best fresh out of the pan.
