Ingredients
Serves: 4- 1 3/4 cup mashed potatoes
- 14 ounces canned tuna in brine, drained
- 2 tablespoons ketchup
- 6 green onions, finely chopped
- 1 teaspoon dried Italian seasoning
- 1 egg, beaten
- 1 teaspoon hot sauce
- Salt and pepper
- 3 ounces dried bread crumbs
- Canola oil for frying
Preparation method
Prep: 15 mins | Cook: 10 mins | Extra time: 30 mins, chilling1. Stir mashed potato and tuna together in a bowl. Add ketchup, green onion, herbs, egg, hot sauce and salt and pepper to taste.
2. Form the mixture into eight patties. Pat bread crumbs into the cakes to coat. Set on a baking sheet and refrigerate for 30 minutes.
3. Pour 1/4-inch layer of canola oil into a large skillet and set over medium-high heat. Fry cakes in hot oil for about 10 minutes, flipping once midway through cooking time, until lightly browned. Serve.
