Fried pike with a tasty sauce mashed potatoes with macadamia nuts and rocket salad recipe details
|600 g||potatoes, peeled|
|50 g||macadamia nuts, chopped|
|400 ml||fish stock|
|350 g||single cream|
|1 tbsp||curry powder|
|3 sprig(s)||thyme, chopped|
|1||ripe lemon, juice and grated rind|
|salt and pepper|
|3 tbsp||white balsamic vinegar|
|2 clove(s)||garlic, minced|
InstructionsCut 50g butter into flakes and freeze.
Cook the potatoes in salted water for 20 minutes, then drain. In a saucepan, heat the milk, 150g cream and the 50g butter. Add the potatoes and mash. Season to taste with salt, pepper and nutmeg. Keep warm.
Roast the nuts.
In a saucepan, combine the stock, 200g cream and the curry. Bring to a boil. Reduce the heat and cook until slightly thickened. Season to taste with salt, pepper lemon juice and zest. Stir in the butter flakes.
Mix together the vinegar and 3 tablespoons of the oil. Season to taste with salt and sugar. Mix together the rocket and the dressing.
In a pan, heat 2 tablespoons of the oil. Sauté the garlic and the thyme. Fry the fish for 2-3 minutes per side. Season with salt and pepper.
Place the fish on a plate and coat with the sauce. Stir the nuts into the mashed potatoes and serve with the fish and the salad.
