Fried pike with a tasty sauce mashed potatoes with macadamia nuts and rocket salad recipe details
Ingredients
600 g | potatoes, peeled |
50 g | macadamia nuts, chopped |
400 ml | fish stock |
350 g | single cream |
1 tbsp | curry powder |
100 ml | milk |
4 | pike fillets |
3 sprig(s) | thyme, chopped |
1 | ripe lemon, juice and grated rind |
200 g | rocket |
100 g | butter |
salt and pepper | |
3 tbsp | white balsamic vinegar |
sugar | |
5 tbsp | oil |
nutmeg | |
2 clove(s) | garlic, minced |
Instructions
Cut 50g butter into flakes and freeze.Cook the potatoes in salted water for 20 minutes, then drain. In a saucepan, heat the milk, 150g cream and the 50g butter. Add the potatoes and mash. Season to taste with salt, pepper and nutmeg. Keep warm.
Roast the nuts.
In a saucepan, combine the stock, 200g cream and the curry. Bring to a boil. Reduce the heat and cook until slightly thickened. Season to taste with salt, pepper lemon juice and zest. Stir in the butter flakes.
Mix together the vinegar and 3 tablespoons of the oil. Season to taste with salt and sugar. Mix together the rocket and the dressing.
In a pan, heat 2 tablespoons of the oil. Sauté the garlic and the thyme. Fry the fish for 2-3 minutes per side. Season with salt and pepper.
Place the fish on a plate and coat with the sauce. Stir the nuts into the mashed potatoes and serve with the fish and the salad.
