Fried Morning Glory Thai Pak Boong Fai Deng recipe

|400 g||morning glory|
|10 clove(s)||garlic, chopped|
|6||red Thai chillies, large (prik chee-fa sot daeng), cut into thin rings|
|2 tbsp||salted soy beans|
|1 tbsp||fish sauce|
|1 tbsp||oyster sauce|
|1 tsp||sugar, to taste|
Break off the leaves of the morning glory, and cut stems into 5 cm long pieces. Separate leaves from stems.
Heat a wok with oil. When the oil is very hot, add morning glory stems and stir fry for a minute. Add all other ingredients, and stir fry for 2 more minutes.
Serve with Thai fragrant rice.
For vegetarians, fish sauce can be replaced by soy sauce.
