Ingredients

800 g kingclip fillet, (ling in Australia)
1 tsp salt
100 g flour
200 ml vegetable oil
50 g butter
300 g mushrooms, champignons, cleaned and sliced
3 clove(s) garlic, chopped
2 medium onion, chopped
2  tomatoes, peeled, seeded and chopped
freshly ground pepper

Instructions

Rinse kingclip fillets under cold water and dry with paper towels. Cut fillets into two pieces of 400g each and season with salt and pepper. Coat fillets in flour and fry in oil-butter mixture for 3 minutes on each side.

Fry the mushrooms, garlic, onions and tomatoes in heated oil-butter mixture in a separated pan for 5 minutes and season with salt and pepper.

Place fillets on plates and cover the fried kingclip with the mushroom sauce. Serve with baked potatoes.
