Fried codfish with carrots and mashed potatoes recipe details
Ingredients
1 kg | potatoes, peeled and quartered |
800 g | carrots, peeled and thinly diced |
200 g | single cream |
50 g | cornflakes |
4 | codfish fillets |
1 | egg |
200 ml | milk |
salt and freshly ground black pepper | |
3 tbsp | butter |
50 g | butter |
1 tsp | sugar |
2 tbsp | flour |
nutmeg |
Instructions
Cook the potatoes in salted water until done.In a pan, melt 1 tablespoon of the butter. Sauté the carrots for 2-3 minutes. Pour in the cream. Bring to a boil and cook for 8 minutes. Season to taste with salt and sugar.
Crush the cornflakes. Season the fish with salt and pepper. Break the egg into a soup plate and whisk slightly with a fork. Turn the fish first in the flour, then in egg and finally in the crushed cornflakes. In a pan, heat 2 tablespoons of the butter and fry the fish fillets until golden brown on both sides.
Heat the milk with 50g butter. Drain the cooked potatoes and mash with the milk and butter. Season to taste with salt, pepper and nutmeg.
Serve the fish together with the carrots and mashed potatoes.
