Fried chilli potatoes recipe details
Ingredients
800 g | white potatoes |
½ tbsp | chilli powder |
4 tbsp | vegetable ghee |
1 large | onion, thinly sliced |
8 | dried curry leaves, crumbled |
salt |
Instructions
Peel potatoes and cut into 4 cm/1 1/2 inch chunks (roughly).Parboil potatoes, then drain and place in a bowl with curry leaves and chilli powder, stir gently until potatoes are coated and season well with salt.
Heat ghee in a large non-stick pan and fry onion over a medium heat for about 5 minutes, stirring occasionally, until softened and lightly golden.
Stir in potatoes (add a little more ghee if too dry) and fry, turning occasionally, for about 10-15 minutes or until potatoes and onions are golden.
Taste and adjust seasoning if necessary, serve as required.
