Ingredients

800 g white potatoes
½ tbsp chilli powder
4 tbsp vegetable ghee
1 large onion, thinly sliced
8  dried curry leaves, crumbled
salt

Instructions

Peel potatoes and cut into 4 cm/1 1/2 inch chunks (roughly).

Parboil potatoes, then drain and place in a bowl with curry leaves and chilli powder, stir gently until potatoes are coated and season well with salt.

Heat ghee in a large non-stick pan and fry onion over a medium heat for about 5 minutes, stirring occasionally, until softened and lightly golden.

Stir in potatoes (add a little more ghee if too dry) and fry, turning occasionally, for about 10-15 minutes or until potatoes and onions are golden.

Taste and adjust seasoning if necessary, serve as required.
