Codfish fillet in tomato sauce recipe details
Ingredients
200 g | tomatoes, diced |
1 | shallot, chopped |
2 tsp | oil |
salt and freshly ground black pepper | |
50 g | rocket |
1 tbsp | balsamic vinegar |
1 tbsp | oil |
150 g | codfish fillet |
some | lemon juice |
some | thyme |
Instructions
In a pan heat 1 teaspoon of oil and sauté the shallot. Add the tomatoes and the thyme and season to taste with salt and pepper. Cook for 10-15 minutes.In another pan heat 1 teaspoon of oil. Season the fish with salt, pepper and lemon juice. Fry the fish for 2-3 minutes from each side.
Mix together the remaining oil, vinegar, salt and pepper. Add the rocket and toss.
Arrange the fish on a serving plate. Pour over the tomato sauce. Serve with the rocket salad.
