Ingredients

200 g tomatoes, diced
1  shallot, chopped
2 tsp oil
salt and freshly ground black pepper
50 g rocket
1 tbsp balsamic vinegar
1 tbsp oil
150 g codfish fillet
some lemon juice
some thyme

Instructions

In a pan heat 1 teaspoon of oil and sauté the shallot. Add the tomatoes and the thyme and season to taste with salt and pepper. Cook for 10-15 minutes.

In another pan heat 1 teaspoon of oil. Season the fish with salt, pepper and lemon juice. Fry the fish for 2-3 minutes from each side.

Mix together the remaining oil, vinegar, salt and pepper. Add the rocket and toss.

Arrange the fish on a serving plate. Pour over the tomato sauce. Serve with the rocket salad.
