Fresh fruit cake recipe details

Ingredients
Serves: 12- 1 1/2 cups orange juice
- 3/4 cups sugar
- 2 tablespoons cornstarch
- 1 teaspoon grated orange peel
- 1 teaspoon grated lemon peel
- 1/4 teaspoon salt
- 1 (16 ounce) package angel food cake mix
- 3 medium peaches, peeled and sliced
- 1 pint strawberries
- 1 cup blueberries
Preparation method
Prep: 2 hours | Cook: 20 mins1. For Fruit sauce: Prepare 2 hours before serving.
2. In a 2 quart saucepan, mix orange juice, sugar, cornstarch, orange peel, lemon peel and salt over medium heat. Stir constantly until mixture thickens and boils, boil for 1 minute. Cover saucepan and place in refrigerator for about 1 hour.
3. For Cake:
4. Preheat oven to 375 degrees F. Line a 15 1/2 x 10 1/2 jelly roll pan with waxed paper and grease the paper.
5. Prepare angel food cake mix as directed but spread batter evenly in jelly-roll pan.
6. Bake for 20 minutes.
7. Cover a wire rack with waxed paper. When cake is done, use a small spatula to loosen it from sides of pan. Invert onto waxed paper. Lift off pan and remove waxed paper. Cool cake completely.
8. When cake is cool return to clean jelly roll pan.
9. Spread top of cake with about half of chilled fruit sauce and strawberries. Arrange peaches, strawberries and blueberries on cake, brush with remaining fruit sauce.
