Danish salmon mousse recipe details
Ingredients
150 g | salmon fillet |
1 sheet(s) | gelatin |
125 ml | mayonnaise |
tbsp | lemon juice |
200 g | whipping cream |
2 tbsp | dill, finely chopped |
1 tsp | onion powder |
cayenne pepper | |
salt |
Instructions
Poach the salmon fillet in salted water until just cooked, then drain and pick the fish to small pieces.Soak the gelatin in cold water for 5 minutes. Squeeze out the gelatin and dissolve in a small amount of hot water. Leave to cool down.
Mix the mayonnaise with onion powder and dill and season to taste with salt, cayenne pepper and lemon juice. Stir in the gelatin and refrigerate for about 20 minutes.
Whisk the cream until stiff. Stir the salmon flakes into the mayonnaise mixture and fold in the whipped cream. Refrigerate for another hour.
Shape to quenelles and serve with toast or crackers as an appetizer.
