Fresh basil lemon pesto recipe details
Ingredients
300 g | fresh basil |
3 tbsp | pine nuts, lightly toasted |
2 clove(s) | garlic, roughly chopped |
80 g | Parmesan or Romano cheese, grated |
lemon juice of 1 lemon, optional | |
salt, to taste |
Instructions
Place the nuts and garlic in a blender and process until mixture is finely ground. Add about half of the olive oil and a third of the basil. Process until the leaves are blended well.With the blender running, add more basil, a handful at a time. Keep processing until the mixture is smooth.
Stir in the cheese, lemon juice and add salt to taste. Mix again to incorporate the cheese.
Pesto will keep for up to two weeks if refrigerated.
