Ingredients
For the Base: | |
140 g | plain flour |
140 g | unsalted butter |
40 g | ground almonds |
40 g | caster sugar |
For the Filling: | |
250 g | icing sugar |
1 tsp | coffee essence |
4 | egg whites |
Instructions
Line and grease a flan dish.Preheat oven to Gas Mark 6, 200°C, 400°F.
To make the base:
Place ingredients into a bowl and rub in the butter between your fingertips. Mix to a dough and form into a ball. Cover with cling film and chill for at least 30 minutes, preferably an hour.
Roll out on a lightly floured surface to fit the tin and sides.
Lay a sheet of parchment over the base and part fill with baking beans or uncooked rice and bake fro 15 minutes. Remove beans or rice and the lining. Set aside to cool.
Increase the oven temperature to Gas Mark 7, 220°C, 425°F.
To make the filling:
Mix one egg white, sugar and coffee with a wooden spoon and then whisk. Add the remaining egg whites carefully.
Pour mixture into prepared base and cook for 30 minutes. Allow to cool before serving.
Serve warm or cold with cream or ice cream.
