French nanny's onion soup recipe details
- Ingredients
- 6 to 8 medium onions, sliced
- Butter or olive oil
- 3 cans beef broth
- 2 to 3 Tablespoons brandy (optional)
- Day-old French bread, sliced
- Swiss cheese, sliced
Saute onions in butter or oil until tender or lightly golden. Add 3 cans of beef broth. Simmer for about 30 minutes and let sit on top of the stove to let the flavors blend. You can add 2 to 3 Tablespoons of brandy.
Toast slices of day-old French bread. Pour soup into individual oven-proof bowls. Put some sliced Swiss cheese, then a slice of French bread, and more cheese on soup. Bake at 400 degrees for 15 minutes and then broil for 5 minutes.
