Foxy granola recipe details
- Ingredients:
- 6 cups old-fashioned oats
- 1/2 cup wheat germ
- 1/2 cup honey
- 4 teaspoons vegetable oil
- 2/3 cup extra chunky peanut butter
- 1 teaspoon vanilla
- 1/2 cup walnuts
- 1/2 cup pecans
- 1/2 cup almonds
- 1/2 cup dates, dried
- 1/2 cup apricots, dried
- 1/2 cup raisins
- 1/2 cup cranberries, dried

- Dry as a snack – great for kid’s lunch box.
- Sprinkle as a topping on ice cream.
- Great crust on your favorite apple crisp recipe.
- Try adding 3/4 cup to your pancake mix.
- Mix up your favorite muffin recipe, berries included, and add 1-1/2 cups of “Foxy Granola.”
Preheat oven to 300 degrees. In extra-large bowl, toss oats and wheat germ; set aside. In a small saucepan, heat honey and vegetable oil until hot, notboiling, then add peanut butter and vanilla. Stir until peanut butter has liquefied. Pour over oat mixture and toss until everything is well coated. Spread onto foil-lined cookie sheets. Bake for 30 minutes (stirring every 10 minutes) until light golden brown. Remove from oven and cool.
In same large bowl in which oats were tossed, add chopped walnuts, pecans, almonds, dates, apricots, raisins, and cranberries. Toss well with oat mixture. Store in airtight containers. Will keep well for 6 weeks (date containers to keep track of time). After expiration date, toss out for birds — they love it!
Makes too much for your size family: Great gift idea for family and friends. Wonderful donation for a bake sale. (Just place in a clean glass container and tie on a colorful ribbon).
