Four-Layer Carrot Cake in the Toaster Oven

Looks like a fancy dessert, but isn’t too difficult. After all, nothing you make in the toaster oven should be.

Ingredients

- 2 eggs
- 3/4 cup vegetable oil
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups grated carrots
- 1/2 cup chopped pecans
- For frosting:
- 1/4 cup butter, softened
- 4 ounces cream cheese, softened
- 2 cups confectioners’ sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped pecans
Preparation method
Prep: 30 mins | Cook: 30 mins
1. Preheat toaster oven to 325 degrees F. Coat a 9×11-inch baking dish with nonstick cooking spray, then sprinkle with flour and tap off excess.
2. Combine eggs, oil, white sugar, and vanilla in a mixing bowl, incorporating well. Then add flour, baking soda, baking powder, salt, and cinnamon. Fold in the carrots and pecans, then transfer batter into the baking dish.
3. Cover dish with a length of aluminum foil to prevent the top from browning too fast. Bake for 30 minutes, then remove foil and bake for 10 minutes more. Cool.
4. Combine all frosting ingredients in a mixing bowl and whip until smooth. Frost cake as one layer, or quarter and stack to create a layered cake.
