Four cheese and crab quiche recipe details
- Ingredients – Crust (Old French Recipe):
- 1/2 cup boiling water
- 1/2 cup vegetable oil
- 2 cups flour
- Pinch salt
- Filling:
- 1/2 cup shredded Swiss cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup crumbled feta cheese
- 1/2 cup grated Romano cheese
- 4 eggs
- 1 pint half & half (you can substitute heavy cream)
- 1/2 cup cubed zucchini or broccoli
- 1 cup shredded crab meat
- Pinch of salt
- 1/4 teaspoon fresh black pepper
- Pinch of cayenne pepper
- Pinch of nutmeg
Crust: Combine ingredients, mix with fork, and press into a large quiche pan. Do not roll; handle as little as possible.
Filling: Combine eggs, half & half, and seasoning. Whisk for 1 minute. Put cheeses, vegetable, and crab into prepared shell. Pour liquid over filling. Bake at 425 degrees for 15 minutes, then reduce heat to 350 degrees. Bake for 45 minutes or until a knife inserted comes out dry.
