Flounder with shrimp stuffing recipe details
A complex shrimp mix gets rolled up in flounder and baked to perfection. Either of these would be delicious on its own, but together this is a meal fit for royalty.

Ingredients
Serves: 6-
STUFFING:
- 6 tablespoons butter, cubed
- 1 small onion, finely chopped
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped green pepper
- 1 pound uncooked shrimp, peeled, deveined and chopped
- 1/4 cup beef broth
- 1 teaspoon diced pimentos, drained
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dill weed
- 1/2 teaspoon minced chives
- 1/8 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 1/2 cups soft bread crumbs FISH:
- 6 (3 ounce) flounder fillets
- 5 tablespoons butter, melted
- 2 tablespoons lemon juice
- 1 teaspoon minced fresh parsley
- 1/2 teaspoon paprika
- Salt and pepper to taste
Preparation method
Prep: 30 mins | Cook: 20 mins1. Preheat oven to 375 degrees F and coat a 13×9-inch baking dish with nonstick cooking spray.
2. To make the stuffing, place butter in a large skillet over medium heat. Cook onion, celery, and green pepper in the hot butter for about 6 minutes, then add shrimp and cook for another 2 or 3 minutes until shrimp turn pink and curl.
3. Stir in the broth, pimentos, Worcestershire, dill, chives, salt, and cayenne. Continue to cook just until broth heats up, then remove from the flame and add bread crumbs.
4. Place about 1/3 cup of shrimp mixture on each flounder fillet. Carefully roll up and arrange in prepared baking sheet. Coat with butter and sprinkle with lemon juice, parsley, paprika, salt, and pepper.
5. Bake for 20 to 25 minutes, until fish is cooked thoroughly.
