Bulgur pilav recipe details
Ingredients
250 g | Bulgur wheat, coarse |
700 ml | water |
1 large | onion |
2 cube(s) | vegetable stock or |
2 tbsp | stock, like Marigold |
5 tbsp | sultanas |
2 tbsp | olive oil |
4 tbsp | pumpkin and sunflower seeds |
some | black pepper, freshly ground |
pinch(es) | mixed spice, to taste |
Instructions
Put the olive oil in a medium sized pot and heat. Peel the onion, cut into little cubes and fry in the oil until they start to soften.Add the pepper, stock cubes/powder, sultanas and bulgur. Stir well and roast for a couple of minutes. Add the warm water bring to the boil and boil for 2-3 minutes. Then turn the heat down and let it simmer/stand on the lowest heat for 10-12 minutes. You can also mix the water with the stock beforehand and the add it as stock.
This is delicious served on its own and can be made into a tabbouleh style salad when mixed with fresh mint and tomato as soon as it is cooled down or if there are any leftovers.
