Ingredients

250 g Bulgur wheat, coarse
700 ml water
1 large onion
2 cube(s) vegetable stock or
2 tbsp stock, like Marigold
5 tbsp sultanas
2 tbsp olive oil
4 tbsp pumpkin and sunflower seeds
some black pepper, freshly ground
pinch(es) mixed spice, to taste

Instructions

Put the olive oil in a medium sized pot and heat. Peel the onion, cut into little cubes and fry in the oil until they start to soften.

Add the pepper, stock cubes/powder, sultanas and bulgur. Stir well and roast for a couple of minutes. Add the warm water bring to the boil and boil for 2-3 minutes. Then turn the heat down and let it simmer/stand on the lowest heat for 10-12 minutes. You can also mix the water with the stock beforehand and the add it as stock.

This is delicious served on its own and can be made into a tabbouleh style salad when mixed with fresh mint and tomato as soon as it is cooled down or if there are any leftovers.
