- Ingredients:
- 2 cups flour
- 2/3 cup sugar
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs, slightly beaten
- 1 cup milk
- 1/3 cup melted butter
- 1 teaspoon vanilla
- lemon curd or all-fruit preserves
Sift flour. Using wire whisk, blend flour, sugar, baking powder, and salt in large mixing bowl. Make well in center. Beat egg, milk, vanilla, and butter until smooth. Stir egg mixture into dry ingredients just until combined. Pour into muffin pan that has been sprayed with an all-purpose cooking spray. Drop 1 teaspoon of lemon curd or preserves on top of each muffin batter. Bake 20 to 25 minutes at 400 degrees. Let rest on cooling rack 10 minutes before turning over.
For blueberry muffins, add 1/4 teaspoon nutmeg to dry ingredients and one cup of blueberries to batter. Blueberries may be dropped on top of muffins to prevent sinking to the bottom of pan.
