Figgy orange muffins details
- Ingredients
- 1-1/2 cups whole-wheat flour
- 1 cup unbleached flour
- 2/3 cup sugar
- Pinch of salt
- 1 teaspoon baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon cinnamon
- 2 eggs
- 2/3 cup vegetable oil
- 2/3 cup yogurt
- 2/3 cup buttermilk
- 2 Tablespoons molasses
- 1/4 cup honey
- 1-1/2 cups ground-up figs (use the meat grinder)
- 1 orange ground up with the figs (including rind)
- 1 cup ground-up raisins
Mix dry ingredients (flours, sugar, salt, baking powder, baking soda, and cinnamon) in a bowl. In a separate bowl, beat eggs; add oil and beat together. Add yogurt, buttermilk, molasses, honey, figs, orange, and raisins and mix together. Add dry ingredients. Bake at 325 degrees in oiled tins for 20 to 25 minutes until just firm.
