Ingredients
1 | onion, chopped |
1 clove(s) | garlic, chopped |
8 tbsp | oil |
1 tbsp | tomato puree |
2 can(s) | tomatoes, diced |
1 tbsp | balsamic vinegar |
salt, pepper and sugar | |
4 | pike perch fillets |
150 g | freshly grated Parmesan cheese |
4 medium | eggs |
4 tbsp | flour |
½ bunch(es) | basil, chopped |
Instructions
Sauté onion and the garlic in 1 tablespoon of oil until lucent. Add the tomato purée and cook stirring for a minute. Pour in the tomatoes and the vinegar and bring to a boil. Cover and simmer for 10 minutes. Season to taste with salt, pepper and sugar.
Cut each pike perch fillet into 2 pieces. Mix the eggs with the cheese. Season with salt and pepper. Dip the fish into flour and afterwards into the egg mixture. Fry the fish in oil until golden.
Fold the basil in the sauce. Serve the fish with the sauce.
