Ingredients

750 g fillet of pork
250 ml stock
250 ml Guinness
30 g butter
2  onions, chopped
1 tbsp plain flour
100 g sour cream
salt and pepper, to taste

Instructions

Cut the fillets into stripes.

Heat butter in a pan and sauté the meat until slightly golden and just cooked through. Take out of the pan and set aside.

Add the onions into the pan and cook stirring until pale yellow. Dust with the flour and cook stirring for a minute. Season with salt and pepper and deglaze with stock and Guiness. Cook over low heat for 8-10 minutes, stirring frequently. Stir in the sour cream, return the meat and cook briefly, just until the meat is hot again.

Season to taste with salt and pepper and serve.
