Guinea fowl with apples recipe details
Ingredients
2 | guinea fowls, preferably free range, ready to cook |
15 | shallots |
3 | apples, e.g. Bramley |
1 bottle(s) | mild cider |
150 ml | Calvados |
salt and freshly ground black pepper | |
butter |
Instructions
Preheat the oven to 160°C.Halve the guinea fowls and rub with salt and pepper all around. Place onto a baking tray, skin side up and arrange the shallots around. Transfer into the oven and pour half of the cider into the tray.
Don’t peel, but divide in eight pieces and core the apples. In a wide pan heat a kob of butter and fry the apples over low heat. After 30 minutes roasting time place the apples beneath the guinea fowls. Pour over another glass of cider, season shallots and apples with salt and pepper and roast for another 30 minutes.
Pour over the remaining cider and roast for the last 30 minutes. The fowls are now golden and crispy.
Arrange the apples and onions on a large warmed serving plate and place the guinea fowls on top. Season to taste the sauce and pour through a fine sieve into a warmed sauce boat. Pour the Calvados into a ladle, ignite and pour over the fowls. Serve with mashed potatoes.
