Ingredients
500 g | slab bacon, diced |
1 small | onion(s), peeled & diced |
1500 g | frozen Italian cut green beans |
4 large | potatoes, peeled and diced |
125 ml | dry white wine |
1 tsp | dried savory |
salt and pepper to taste | |
2 tsp | corn starch |
Instructions
Dissolve corn starch in 1 tablespoon wine, set aside.Sauté slab bacon in large casserole, do not brown.
Discard some of the rendered fat, add diced onions to pot; sauté until translucent.
Add frozen beans, savory, salt, pepper and wine; stir and slowly bring to boil.
Add diced potatoes and more liquid if necessary. Boil 5 or 10 minutes, then simmer until potatoes and beans reach desired doneness.
Add dissolved corn starch, adjust seasoning to taste.The finished dish should be very thick and definitely not watery or soupy.
Serve hot.
Notes:
I use the frozen Italian Cut Green Beans, because suitable fresh beans are not always available. Also, the frozen product requires no cutting or cleaning.
Savory, called Bohnenkraut (“bean herb”) in Germany, is an absolutely essential ingredient for all bean or lentil dishes.
