Ingredients

250 g suet or vegetable suet
500 g plain flour
1 tsp salt
2 tsp baking powder
50 g raisins
milk to mix
sugar, for topping

Instructions

Preheat oven to Gas Mark 4, 180°C, 350°F.

Mix together the flour, salt, suet and baking powder and stir until mixed. Add milk slowly, mixing together to form a slightly dry, but elastic dough. Knead lightly for no more than 20 seconds and turn out to a lightly floured surface.

Roll out to a rectangle about ½ inch, 12 mm thick and sprinkle the raisins evenly over the top. Using the rolling pin, press them lightly into the dough. Starting from the furthest edge, roll the dough towards you into a tight spiral. Moisten the last ½-1 inch, 12-25mm with milk and seal. Also seal the ends by pressing together. Slash the top with 2 or 3 X-shaped cuts. Sprinkle the top thoroughly with sugar and place on a greased baking tray.

Bake for about 30 minutes until golden and serve hot with whipped or clotted cream.
