Feta and courgette stuffed turkey escalopes recipe details
Ingredients
1 | onion, chopped |
1 | red chili, chopped |
1 medium | courgette, peeled and cut lengthwise into 8 slices |
75 g | Feta cheese, cut into 8 pieces |
2 sprig(s) | basil, chopped |
4 | turkey escalopes |
6 tbsp | oil |
2 tbsp | tomato puree |
1 large can(s) | tomatoes, diced |
salt and freshly ground black pepper | |
sugar | |
250 ml | water |
cayenne pepper |
Instructions
In a saucepan, heat 1 tablespoon of oil. Sauté the onion. Add the tomato purée and cook for a minute. Pour in the water, tomatoes and chili. Bring to a boil and simmer for 5-6 minutes. Season to taste with salt, cayenne pepper and sugar.In a pan, heat 2 tablespoons of oil. Fry the courgette slices for 2-3 minutes each side. Season with salt and pepper. Remove from the pan.
Season the meat with salt and pepper. Top each escalope with 2 slices of courgette a piece of cheese and 1-2 basil leaves. Fold over the escalopes and tighten with toothpicks. In the pan, heat the remaining oil. Fry the escalopes from both sides until golden.
Serve the escalopes with the sauce.
