Favorite banana wheat muffins recipe details
- Ingredients:
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup margarine or butter, softened
- 1/2 cup sugar
- 2 eggs
- 1-1/2 cups mashed ripe banana
- 1/4 cup milk
- 1 teaspoon vanilla
- 1 cup coarsely chopped walnuts
Preheat oven to 375 degrees. Grease a 12-muffin cup pan. In a large bowl, stir together the flours, baking soda, baking powder, and salt. In another bowl cream the butter and sugar, beat the eggs. Sir in the mashed banana, milk, and vanilla. Gently stir the banana mixture into the dry ingredients; stir in the walnuts. Spoon the batter into prepared muffin cups and bake 25 minutes or until wooden pick inserted into the center of a muffin comes out clean.
