- Ingredients:
- 3 cups all-purpose flour
- 1/3 cup sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup firm butter (1-1/2 sticks), cut into small pieces
- 3/4 cup chopped dried cranberries (Craisins) or currants
- 1 teaspoon grated orange peel
- 1 cup milk
Mix first five ingredients. Cut in butter with a pastry blender. Stir in fruit and orange peel. Make a well in center of mixture; add milk all at once. With fork, stir until dough pulls away from the bowl. Form dough into a ball and turn onto a lightly floured board. Knead gently once or twice and cut dough into four parts. *Place divided dough onto a cookie sheet that has been lightly sprayed with cooking spray. Pat each portion into a circle and cut each circle into four pieces. Sprinkle with cinnamon sugar (optional). Bake at 400 degrees for 12 minutes.
*Note:Dough can be wrapped in plastic wrap and held in refrigerator overnight before baking. Even a short time in the refrigerator will result in a flakier scone but may require an extra minute or two of baking time.
